I can&#8217;t believe it took me this long as it&#8217;s so delicious. &nbsp; It reminded me of a cross between my favorite <a href=\"http:\/\/www.cookiesorbiscuits.com\/?p=895\" target=\"_blank\">No-Bake Lemon Cheesecake<\/a> and a Lemon &nbsp;Meringue Pie. &nbsp;<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1477\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Key-Lime-Pie-453x680.jpg\" alt=\"A Slice of Key Lime Pie\" width=\"453\" height=\"680\" srcset=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Key-Lime-Pie-453x680.jpg 453w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Key-Lime-Pie-200x300.jpg 200w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Key-Lime-Pie-600x900.jpg 600w\" sizes=\"auto, (max-width: 453px) 100vw, 453px\" \/><\/p>\n<p>My very first taste of Key Lime Pie was a part of a 12 day Christmas&nbsp;challenge, where every day we tried a new food. &nbsp; There were a couple of foods which I had tried before, but all of them were new for our children. &nbsp; It was such a fun activity, and we will probably do it again this&nbsp;year, although this time I&#8217;m going to avoid the lead up to Christmas! &nbsp; &nbsp;Not all foods were liked in our challenge but this one was a huge hit. &nbsp; It wasn&#8217;t everyone&#8217;s favorite (that was reserved for Baked Alaska) but it was pretty high up on everyone&#8217;s lists.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1479\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Whole-Key-Lime-Pie-453x680.jpg\" alt=\"The Whole Key Lime Pie\" width=\"453\" height=\"680\" srcset=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Whole-Key-Lime-Pie-453x680.jpg 453w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Whole-Key-Lime-Pie-200x300.jpg 200w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Whole-Key-Lime-Pie-600x899.jpg 600w\" sizes=\"auto, (max-width: 453px) 100vw, 453px\" \/><\/p>\n<p>Traditionally, a Key Lime Pie is made with a Graham Cookie crust. &nbsp; &nbsp; As my husband loves Key Lime Pie, I needed to make a gluten free crust. &nbsp; Graham Crackers are made from Graham wheat, so there is no way I can alter this crust and stick to the traditional crust. &nbsp; I have now tried two adaptions &#8211; one a ginger snaps&nbsp;cookie base and the other an animal cracker cookie base. &nbsp; This one is the animal cracker base &#8211; I used the Kroger Brand &#8211; Simple Truth Gluten Free Animal Crackers. &nbsp; It was pretty good, but I definitely preferred the Mi-Del Gluten Free&nbsp;Ginger Snaps&nbsp;Cookies. &nbsp; I just thought the stronger&nbsp;but sweet ginger flavor paired better with the tartness of the key lime.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1480\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/A-Slice-of-Key-Lime-Pie-680x453.jpg\" alt=\"A Slice of Key Lime Pie\" width=\"680\" height=\"453\" srcset=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/A-Slice-of-Key-Lime-Pie-680x453.jpg 680w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/A-Slice-of-Key-Lime-Pie-300x200.jpg 300w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/A-Slice-of-Key-Lime-Pie-600x400.jpg 600w\" sizes=\"auto, (max-width: 680px) 100vw, 680px\" \/> If you cannot get your hands on Key Limes, just use regular Limes. &nbsp; The result will be a slightly sweeter pie as they are not as tart as Key Limes. &nbsp; Key Limes are very small compared to regular Limes, as you can see in the picture below. &nbsp; They are picked when they are still green, but turn greenish-yellow when they are ripe. &nbsp; You can use both the green and yellow Key Limes when making a Key Lime Pie. &nbsp; &nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1478\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Key-Limes-452x680.jpg\" alt=\"Key Limes are much smaller than regular Limes\" width=\"452\" height=\"680\" srcset=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Key-Limes-452x680.jpg 452w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Key-Limes-199x300.jpg 199w\" sizes=\"auto, (max-width: 452px) 100vw, 452px\" \/><\/p>\n    <div class=\"blog-yumprint-recipe blog-yumprint-standard    \" yumprintrecipe=\"h44c\" itemscope itemtype=\"http:\/\/schema.org\/Recipe\">    <img decoding=\"async\" class=\"blog-yumprint-google-image\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Key-Lime-Pie-453x680.jpg\" style=\"display:block;position:absolute;left:-10000px;top:-10000px;\" itemprop=\"image\" \/>\t<div class=\"blog-yumprint-recipe-title\" itemprop=\"name\">Key Lime Pie<\/div>\t<div class=\"blog-yumprint-recipe-published\" itemprop=\"datePublished\">2014-07-08 22:15:05<\/div>\t<div class=\"blog-yumprint-header\">\t\t<div class=\"blog-yumprint-save blog-yumprint-action\"><a href=\"http:\/\/yumprint.com\/app\/object\/h44c\">Save Recipe<\/a><\/div>\t\t<div class=\"blog-yumprint-print blog-yumprint-action\">Print<\/div>\t<\/div>\t<div class=\"blog-yumprint-spacer\"><\/div>\t<div class=\"blog-yumprint-recipe-contents\">\t\t<div class=\"blog-yumprint-ingredient-section\" yumprintsection=\"0\">\t\t\t<div class=\"blog-yumprint-subheader\">Cookie Base<\/div>\t\t\t<ol class='blog-yumprint-ingredients'>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"0\" itemprop=\"ingredients\">8 oz graham crackers, ginger snaps cookies or animal crackers<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"1\" itemprop=\"ingredients\">4oz butter, melted<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-ingredient-section\" yumprintsection=\"1\">\t\t\t<div class=\"blog-yumprint-subheader\">Filling<\/div>\t\t\t<ol class='blog-yumprint-ingredients'>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"0\" itemprop=\"ingredients\">2 (14oz) cans sweetened condensed milk<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"1\" itemprop=\"ingredients\">1 cup fresh Key lime juice<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-ingredient-section\" yumprintsection=\"2\">\t\t\t<div class=\"blog-yumprint-subheader\">Meringue<\/div>\t\t\t<ol class='blog-yumprint-ingredients'>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"0\" itemprop=\"ingredients\">4 egg whites<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"1\" itemprop=\"ingredients\">2 tablespoons water<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"2\" itemprop=\"ingredients\">pinch salt<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"3\" itemprop=\"ingredients\">3\/4 cup superfine baker's sugar<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"3\">\t\t\t<div class=\"blog-yumprint-subheader\">Instructions<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Preheat the oven to 350\u00b0 F.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Place the cookies in a Ziplock bag, and use a rolling pin to crush the cookies.  Do not crush the cookies finely, as too much crushing will make the base too hard.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Transfer the cookie crumbs to a medium sized mixing bowl and add the melted butter.   Mix until well combined.   Spread the crumbs over the base of a 9\" pie plate and press down firmly, using your hand or the base of a glass cup.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Bake the pie crust in the oven for 10 minutes.   Set aside to cool.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Reduce the oven temperature to 325\u00b0 F.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"5\">In a large bowl, combine the sweetened condensed milk and lime juice.    Stir until combined.   Pour into the prepared pie crust.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"6\">In a large bowl, combine the egg whites, water and salt.    Beat on high speed until soft peaks form.
