From delicious Indian curries to baked chicken &#8211; there are just so many variations. &nbsp;I&#8217;ve said it before, but Weight Watchers come out with some of the best recipes! &nbsp; &nbsp;The thing I miss most about not following their diet is my lack of access to their recipe books! &nbsp; They have helped me loose baby weight after each baby, and then again after finishing breastfeeding. &nbsp; I always packed on the weight after breastfeeding &#8211; it really does burn calories but&nbsp;I always keep eating the same way after finishing!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1490\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Cornmeal-Crusted-Chicken-680x453.jpg\" alt=\"Cornmeal Crusted Chicken\" width=\"680\" height=\"453\" srcset=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Cornmeal-Crusted-Chicken-680x453.jpg 680w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Cornmeal-Crusted-Chicken-300x200.jpg 300w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Cornmeal-Crusted-Chicken-600x400.jpg 600w\" sizes=\"auto, (max-width: 680px) 100vw, 680px\" \/><\/p>\n<p>My daughter does not like chicken very much, but she will eat this. &nbsp; And my husband loves it. &nbsp; Because we eat it often enough, I simply make a large batch of the cornmeal coating&nbsp;and keep it in a Ziplock bag. &nbsp; &nbsp;It makes this a very quick week night dinner, as all I have to do is prep the vegetables, then scoop out 1\/2 a cup of the&nbsp;cornmeal crust. &nbsp; &nbsp;I also make my own Cajun spice &#8211; I&#8217;ll give you the recipe in the next few weeks but there are many out there on the internet if you want to make one now. &nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1491\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Chicken-with-Onions-Peppers-and-Corn-497x680.jpg\" alt=\"Chicken with Onions, Peppers and Corn\" width=\"497\" height=\"680\" srcset=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Chicken-with-Onions-Peppers-and-Corn-497x680.jpg 497w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Chicken-with-Onions-Peppers-and-Corn-219x300.jpg 219w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Chicken-with-Onions-Peppers-and-Corn-600x820.jpg 600w\" sizes=\"auto, (max-width: 497px) 100vw, 497px\" \/><\/p>\n<p>It&#8217;s hard to see in the photos, but the broth and cornstarch which is added to the veggies make a light sauce,&nbsp;giving an added flavor boost to the vegetables. &nbsp; I also love that this is a meal in itself &#8211; no need to serve up any other vegetables if you don&#8217;t want to &#8211; although I have to confess I often add a salad or another vegetable or two on the side. &nbsp; I do love my veggies!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1492\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Cornmeal-Chicken-680x464.jpg\" alt=\"Cornmeal Chicken\" width=\"680\" height=\"464\" srcset=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Cornmeal-Chicken-680x464.jpg 680w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Cornmeal-Chicken-300x204.jpg 300w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Cornmeal-Chicken-600x409.jpg 600w\" sizes=\"auto, (max-width: 680px) 100vw, 680px\" \/><\/p>\n<p>As these chicken breasts are pan fried, I find I need to slice my chicken breasts in half. &nbsp; Otherwise, they take too long to cook and you end up with burnt outsides and pink middles. &nbsp; &nbsp;You can either butterfly cut them or continue the butterfly cut all the way through to make 2 breasts. &nbsp; &nbsp;If you think your chicken breasts are thick enough to be sliced, then you will probably only need 2 breasts instead of the 4 in the recipe.<\/p>\n    <div class=\"blog-yumprint-recipe blog-yumprint-standard    \" yumprintrecipe=\"h6_2\" itemscope itemtype=\"http:\/\/schema.org\/Recipe\">    <img decoding=\"async\" class=\"blog-yumprint-google-image\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/07\/Chicken-with-Onions-Peppers-and-Corn-497x680.jpg\" style=\"display:block;position:absolute;left:-10000px;top:-10000px;\" itemprop=\"image\" \/>\t<div class=\"blog-yumprint-recipe-title\" itemprop=\"name\">Cornmeal Crusted Chicken with Corn, Onions & Peppers<\/div>\t<div class=\"blog-yumprint-recipe-published\" itemprop=\"datePublished\">2014-07-10 15:19:44<\/div>\t<div class=\"blog-yumprint-header\">\t\t<div class=\"blog-yumprint-save blog-yumprint-action\"><a href=\"http:\/\/yumprint.com\/app\/object\/h6_2\">Save Recipe<\/a><\/div>\t\t<div class=\"blog-yumprint-print blog-yumprint-action\">Print<\/div>\t<\/div>\t<div class=\"blog-yumprint-spacer\"><\/div>\t<div class=\"blog-yumprint-recipe-contents\">\t\t<div class=\"blog-yumprint-ingredient-section\" yumprintsection=\"0\">                <div class=\"blog-yumprint-subheader\">Ingredients<\/div>\t\t\t<ol class='blog-yumprint-ingredients'>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"0\" itemprop=\"ingredients\">1\/2 cup yellow cornmeal<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"1\" itemprop=\"ingredients\">3 teaspoons Cajun seasoning<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"2\" itemprop=\"ingredients\">4 chicken breasts<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"3\" itemprop=\"ingredients\">2 tablespoon butter<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"4\" itemprop=\"ingredients\">1 medium sized onion, finely chopped<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"5\" itemprop=\"ingredients\">1 green bell pepper, finely choppped<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"6\" itemprop=\"ingredients\">1 cup frozen corn kernels, thawed<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"7\" itemprop=\"ingredients\">1\/4 teaspoon salt<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"8\" itemprop=\"ingredients\">1\/4 teaspoon black pepper<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"9\" itemprop=\"ingredients\">1\/2 cup reduced sodium chicken broth<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"10\" itemprop=\"ingredients\">2 tablespoons cornstarch<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"1\">\t\t\t<div class=\"blog-yumprint-subheader\">Instructions<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Add the cornmeal and cajun seasoning to a Ziplock bag and shake to combine.   Add the chicken breasts and shake until the chicken is coated with cornmeal.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">In a large frying pan, melt 1 tablespoons of butter over medium heat.   Add the chicken, and fry for approximately 5 minutes.   Turn the chicken over and fry for another 5 minutes or until the chicken is fully cooked.    Remove and cover with aluminum foil.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Add the other tablespoon of butter to the frying pan, if required.   Add the chopped onion, bell pepper and corn.   Saute until the onion has softened, about 5 minutes.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">In a small bowl, mix the broth and cornstarch together.    Add the mixture to the frying pan with the onions, and bring to a boil.   Reduce the heat and simmer for 3-4 minutes, or until the sauce has thickened.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Serve the onion, peppers and corn over the chicken.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-note-section\" yumprintsection=\"2\">\t\t\t<div class=\"blog-yumprint-subheader\">Notes<\/div>\t\t\t<ol class='blog-yumprint-notes'>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"0\">If your chicken breasts are very thick, you will need to butterfly cut the breasts to ensure they cook thoroughly.<\/li>\t\t\t<\/ol>\n\t\t<\/div>    <div class=\"blog-yumprint-recipe-source\">Cookies or Biscuits? http:\/\/www.cookiesorbiscuits.com\/<\/div>\t\t<\/div>\n\t<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Chicken has got to be one of the most versatile meals.
