In a small saucepan, add the cream.\r<\/p><p id=\"yrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Bring the cream to a boil, turning off as soon as the first bubbles appear.   Set aside.\r<\/p><p id=\"yrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Place the sugar mixture on the stove top, over low heat.   Stir constantly until the liquid becomes clear and the sugar has dissolved.   If necessary, wipe the sugar crystals from the side of the saucepan into the sugar mixture, using a pastry brush and water. \r<\/p><p id=\"yrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Once the sugar has dissolved, increase the heat to high.   Stop stirring.   The mixture will start to turn a caramel color after a few minutes.   During this time, occasionally swirl the pan to distribute the sugar around the pan, but do not stir.    Once the liquid has turned a medium amber color, remove from the heat. \r<\/p><p id=\"yrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Immediately add the cream, butter and salt.   The liquid will spurt, so use oven mitts to avoid burns.   Stir the mixture until the butter has melted.   \r<\/p><p id=\"yrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">Set aside until caramel comes to room temperature.    The caramel will become thicker as it cools.   \r<\/p><p id=\"yrecipe-instruction-6\" class=\"instruction\" itemprop=\"recipeInstructions\">Store caramel in the refrigerator for up to 2 weeks.
