Cook over medium heat, without stirring, until the sugar melts and the water boils away.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">The syrup will begin to change color.   Once it a golden, amber, color remove the saucepan from the heat.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Wearing a pair of gloves, slow and carefully pour 1 cup of water into the saucepan.   The mixture will bubble and spurt.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Return the saucepan to the stovetop.   Over low heat, stir the mixture until the sugar melts.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Cool to room temperature. Scrape the bowl and beat for 1 minute more.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"7\">Divide the batter between the two cake tins.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"8\">Bake for 25-27 minutes, or until a toothpick comes out clean from the center of the cake.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"9\">Cool the cakes in their pan for about 15 minutes, and then turn out onto a cooling rack.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"4\">\t\t\t<div class=\"blog-yumprint-subheader\">Brown Butter Frosting<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Place the butter in a small heavy bottom saucepan.   Melt over medium-low heat.   Cook until the butter begins to spurt and foam.  The butter will smell nutty.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Remove the butter from the heat and pour into a mixing bowl.  Allow the butter to cool to room temperature.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Combine the cooled butter, caramel syrup, vanilla and salt.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Add the confectioners sugar and mix.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Add the heavy whipping cream, 1 tablespoon at a time, while beating the frosting.   Scrape the bowl regularly to ensure all the confectioners sugar is mixed in.   Stop adding cream when the icing is smooth and spreadable.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"5\">\t\t\t<div class=\"blog-yumprint-subheader\">Assembling the cake<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Place one cake on a serving plate.
