{"id":39,"date":"2014-03-04T03:32:12","date_gmt":"2014-03-04T03:32:12","guid":{"rendered":"http:\/\/www.cookiesorbiscuits.com\/?p=39"},"modified":"2014-03-08T13:27:10","modified_gmt":"2014-03-08T21:27:10","slug":"vanilla-extract","status":"publish","type":"post","link":"http:\/\/www.cookiesorbiscuits.com\/?p=39","title":{"rendered":"Vanilla Extract"},"content":{"rendered":"<p>I&#8217;m a vanilla girl. &nbsp; Give me the choice between vanilla and chocolate and vanilla will win every time. &nbsp; So imagine my delight when I discovered that you can make your own vanilla extract. &nbsp; &nbsp;I&#8217;ve been making my own for about a year now and I have to question why I never made it before. &nbsp; &nbsp;It is so easy, made simply from vanilla beans and alcohol. &nbsp; &nbsp;You just have to keep topping up the alcohol to get an endless supply.<\/p>\n<p><a href=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Vanilla-Extract1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-124\" alt=\"Vanilla Extract\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Vanilla-Extract1-453x680.jpg\" width=\"453\" height=\"680\" srcset=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Vanilla-Extract1-453x680.jpg 453w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Vanilla-Extract1-200x300.jpg 200w, http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Vanilla-Extract1-600x900.jpg 600w\" sizes=\"auto, (max-width: 453px) 100vw, 453px\" \/><\/a><\/p>\n<p>I love the smell of my own vanilla extract too. &nbsp;When I open the bottle of vanilla beans, that vanilla smell wafts out and I&#8217;m in love. &nbsp; &nbsp;&nbsp;You have to steep your vanilla the first time you make the extract. &nbsp; Each day the smell gets stronger so there were many days when I just opened the lid to get a smell.<\/p>\n<p>The wonderful thing about vanilla essence is that you do not waste a vanilla bean after using it in a recipe. &nbsp; I use my vanilla beans when I make custard and then rinse them off and use them for my vanilla essence. Other recipes you could use the vanilla beans in are vanilla ice-cream or vanilla sugar. &nbsp; You can also just open up the beans with the tip of a sharp knife, and pop them straight into your alcohol.<\/p>\n<p>Vodka is a good choice for making vanilla extract as it is a neutral base, which brings out the full flavor of the vanilla. &nbsp; &nbsp;But bourbon or rum also can be used for a different taste.<\/p>\n<p>I have a working bottle of vanilla extract, meaning that I just keep topping up my bottle with vodka each time it starts running too low.<\/p>\n    <div class=\"blog-yumprint-recipe blog-yumprint-standard    \" yumprintrecipe=\"fIPq\" itemscope itemtype=\"http:\/\/schema.org\/Recipe\">    <img decoding=\"async\" class=\"blog-yumprint-google-image\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Vanilla-Extract1-453x680.jpg\" style=\"display:block;position:absolute;left:-10000px;top:-10000px;\" itemprop=\"image\" \/>\t<div class=\"blog-yumprint-recipe-title\" itemprop=\"name\">Vanilla Extract<\/div>\t<div class=\"blog-yumprint-recipe-published\" itemprop=\"datePublished\">2014-03-03 19:26:06<\/div>\t<div class=\"blog-yumprint-header\">\t\t<div class=\"blog-yumprint-save blog-yumprint-action\"><a href=\"http:\/\/yumprint.com\/app\/object\/fIPq\">Save Recipe<\/a><\/div>\t\t<div class=\"blog-yumprint-print blog-yumprint-action\">Print<\/div>\t<\/div>\t<div class=\"blog-yumprint-spacer\"><\/div>\t<div class=\"blog-yumprint-recipe-contents\">\t\t<div class=\"blog-yumprint-ingredient-section\" yumprintsection=\"0\">                <div class=\"blog-yumprint-subheader\">Ingredients<\/div>\t\t\t<ol class='blog-yumprint-ingredients'>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"0\" itemprop=\"ingredients\">3-4 used vanilla beans<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"1\" itemprop=\"ingredients\">vodka, rum or bourbon<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"1\">\t\t\t<div class=\"blog-yumprint-subheader\">Instructions<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Fill a very clean glass bottle with vodka, rum or bourbon.   Make sure the bottle has a tight fitting lid.   It's important that this bottle is sterile, otherwise tastes from previous foods could contaminate your vanilla.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">If you are using used vanilla beans, rinse off the beans and place them in the alcohol.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">If you are using new vanilla beans, slit the beans lengthwise down the center then place them in the alcohol.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Place your bottle in a cupboard for at least 3 weeks.    The liquid will now smell like vanilla and be a deep brown color.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">At this point, you can pour the vanilla extract into a new bottle and start a new bottle of extract with the used beans.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"5\">Alternatively, you can keep topping up your working bottle up with fresh alcohol when the liquid falls below the tops of the beans.
