{"id":1452,"date":"2014-07-09T08:12:07","date_gmt":"2014-07-09T15:12:07","guid":{"rendered":"http:\/\/www.cookiesorbiscuits.com\/?p=1452"},"modified":"2014-07-07T13:19:00","modified_gmt":"2014-07-07T20:19:00","slug":"lamb-pitas-with-tzatziki","status":"publish","type":"post","link":"https:\/\/www.cookiesorbiscuits.com\/?p=1452","title":{"rendered":"Lamb Pitas with Tzatziki"},"content":{"rendered":"<p>Lamb is one of my favorite meats. &nbsp; &nbsp;I don&#8217;t think there is much that beats a lamb roast for dinner. &nbsp; I especially love that there are always leftovers the next day. &nbsp; &nbsp;One of my favorite ways to eat leftovers is by making a Lamb Pita with some Tzatziki.<\/p>\n<p><a href=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Lamb-Pita.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1455\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Lamb-Pita-453x680.jpg\" alt=\"Lamb Pita\" width=\"453\" height=\"680\" srcset=\"https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Lamb-Pita-453x680.jpg 453w, https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Lamb-Pita-200x300.jpg 200w, https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Lamb-Pita-600x900.jpg 600w\" sizes=\"auto, (max-width: 453px) 100vw, 453px\" \/><\/a><\/p>\n<p>Tzatziki is a yogurt based, Greek sauce or dip. The combination of Greek yogurt (strained yogurt), cucumbers and herbs makes for a light, refreshing taste. It can be served with meats, like on this Lamb Pita or you can use it as a dip and serve it with fresh vegetables or crackers. What ever way you eat it, it&#8217;s delicious! &nbsp;&nbsp;<\/p>\n<p>Some people like their Tzatziki with large chunks of cucumber. &nbsp; I like mine to be smoother, so I use a food processor to chop the cucumber and herbs. &nbsp; If you go with the larger cucumber chunks, you might find it easier to finely chop your herbs&nbsp;and mixing the tzatziki by hand.<\/p>\n<p><a href=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Tzatziki-Sauce.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1459\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Tzatziki-Sauce-680x453.jpg\" alt=\"Tzatziki Sauce\" width=\"680\" height=\"453\" srcset=\"https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Tzatziki-Sauce-680x453.jpg 680w, https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Tzatziki-Sauce-300x200.jpg 300w, https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/06\/Tzatziki-Sauce-600x400.jpg 600w\" sizes=\"auto, (max-width: 680px) 100vw, 680px\" \/><\/a><\/p>\n<p>I have to confess, I have never made my own pita bread. It&#8217;s on my &#8220;must do one day&#8221; list. When we lived in California I had a friend from Israel who made the most amazing pita bread I have ever tried. One day, I&#8217;m going to get around to making some bread just like hers. One day. However, for a quick sandwich, I&#8217;m good with some store bought pitas. I usually add cucumber too, but I had just used my last one in the tzatziki. I like that combination because they are typical ingredients found in a Greek Salad. Place the cucumber in a colander, and toss with the salt.   Place the colander in the sink and let the cucumber drain for 30 minutes.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Drain well and place on a paper towel or clean dish cloth.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">In a food processor, add the cucumber, garlic, lemon juice, dill and mint.   Pulse the food processor until well blended or your desired consistency is reached.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Tip the ingredients into a small bowl, and stir in the Greek yogurt.
