{"id":340,"date":"2014-03-20T08:30:14","date_gmt":"2014-03-20T15:30:14","guid":{"rendered":"http:\/\/www.cookiesorbiscuits.com\/?p=340"},"modified":"2014-03-19T09:20:52","modified_gmt":"2014-03-19T16:20:52","slug":"chicken-in-peanut-butter-sauce","status":"publish","type":"post","link":"https:\/\/www.cookiesorbiscuits.com\/?p=340","title":{"rendered":"Chicken in Peanut Butter Sauce"},"content":{"rendered":"<p>My mum first made Chicken in Peanut Butter Sauce when I was a teenager.&nbsp;&nbsp; The Australian Women&#8217;s Weekly had come out with their new Microwave Cookbook.&nbsp;&nbsp; We poured over this book &#8211; being&nbsp;fascinated by what you could do in a microwave. &nbsp; This was in the 1980&#8217;s when microwave ovens were starting to appear in everyone&#8217;s houses, and they become the fashionable way to cook everything from cakes to main meals.&nbsp;&nbsp; These days I usually only use my microwave for steaming vegetables or reheating food, but I still cook this one meal in the microwave.<\/p>\n<p><a href=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Chicekn-in-Peanut-Sauce-with-Rice.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"680\" height=\"453\" class=\"aligncenter size-large wp-image-342\" alt=\"Chicekn in Peanut Sauce with Rice\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Chicekn-in-Peanut-Sauce-with-Rice-680x453.jpg\" srcset=\"https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Chicekn-in-Peanut-Sauce-with-Rice-680x453.jpg 680w, https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Chicekn-in-Peanut-Sauce-with-Rice-300x200.jpg 300w, https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/03\/Chicekn-in-Peanut-Sauce-with-Rice-600x400.jpg 600w\" sizes=\"auto, (max-width: 680px) 100vw, 680px\" \/><\/a><\/p>\n<p>The peanut butter sauce is essentially a very mild satay sauce &#8211; made from peanut butter, honey, chicken broth, mustard and curry. My family calls it Satay Chicken &#8211; it&#8217;s much easier to say than &#8220;Chicken in Peanut Butter Sauce&#8221; but in deference to those who eat satay I cannot call it this. It&#8217;s definitely kid friendly &#8211; everyone in my family eats it except my 4 year old who is going through a food rebellion stage. Stir the mixture until it has a sauce-like consistency.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Add the cut chicken breast, and mix ensuring that the sauce covers the chicken.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Cook, covered, in the microwave on high for 7 minutes.    Stir.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Cook in the microwave for another 7 minutes.   Check that the chicken is completely cooked, showing no pink.
