It was love at first bite. These scones are so delicious and moist, that I had trouble stopping at just one. I missed out on breakfast, thanks to an impromptu walk to preschool this morning, so this Raspberry and White Chocolate Scone was the perfect brunch. I have used my favorite gluten free flour blend &#8211; <a href=\"http:\/\/www.amazon.com\/gp\/product\/B001SAXNE6\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B001SAXNE6&amp;linkCode=as2&amp;tag=cookorbisc-20&amp;linkId=AL6MTGRMESTUBPM6\">Namaste Gluten Free Perfect Flour Blend<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=cookorbisc-20&amp;l=as2&amp;o=1&amp;a=B001SAXNE6\" alt=\"\" width=\"1\" height=\"1\" border=\"0\">. I find this flour works cup for cup for most foods, except cakes. I have also used a little flaxseed meal\/flour. It&#8217;s my current crush. It adds some extra fiber and Omega 3 essential fatty acid. I have mentioned before that American scones are different from Australian scones, so I decided to walk my readers from Down Under through the process. I know, at least, that my mum will be interested!<\/p>\n<p>The first step to making scones is to preheat the oven to 400\u00b0 F. &nbsp;Scones are typically cooked fast at high temperatures. &nbsp;&nbsp;I&#8217;ve seen lots of different reasons for this, and every one seems to different! &nbsp; &nbsp; I just do it and it works. &nbsp; &nbsp;Line a baking sheet with parchment paper. &nbsp; You can grease the sheet with butter, but I find the parchment paper works better.<\/p>\n<p>Next, mix the eggs, cream and vanilla extract in a small bowl. &nbsp; Set this aside.<\/p>\n<p><a href=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/04\/IMG_0786.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-912\" src=\"http:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/04\/IMG_0786-680x453.jpg\" alt=\"Making Scones - Liquids\" width=\"680\" height=\"453\" srcset=\"https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/04\/IMG_0786-680x453.jpg 680w, https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/04\/IMG_0786-300x200.jpg 300w, https:\/\/www.cookiesorbiscuits.com\/wp-content\/uploads\/2014\/04\/IMG_0786-600x400.jpg 600w\" sizes=\"auto, (max-width: 680px) 100vw, 680px\" \/><\/a><\/p>\n<p>&nbsp;<br \/>\nIn a large bowl, combine the flour, flaxseed meal (optional), baking powder, sugar and salt. Next, grate cold butter into the bowl of flour. This is a new trick I have learned. I used to cut butter, then rub the butter into the dough. This is another thing I have always been taught with making scones. I think this might be why scones work so well with gluten free flours. Gluten Free flours don&#8217;t like a lot of mixing, and neither do scones. If you didn&#8217;t manage to combine all ingredients, give the dough a quick knead but keep it light. This is where Australian and American scones really show their differences. If you haven&#8217;t already washed the egg and cream bowl, you could add the milk to this bowl. Allow the scones to cool slightly, then transfer them to a cooling rack. &nbsp; &nbsp;<\/p>\n<p>While the scones are still warm, lightly spread some of the most delicious glaze you have ever tasted on top the scones. &nbsp; Toss the butter with the flour, then using your hands lightly rub the butter into the flour.  It's good to leave larger chunks of butter in the flour, so don't rub too hard.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Fold in the white chocolate chips.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"5\">Make a well in the flour, and pour in the egg and cream mixture.
